I'd say use maybe an aran weight wool and a 6mm hook for the hat, and a smaller hook (say 5mm) but same. The ears would just be 2 tubes then decrease to a point and stitch on. The hat is originally 11 x 8 inches, but when folded up (as shown in picture) it is 11 x 6.
